If I choose cremation, can I still have a traditional church or chapel service? 

ANSWER:  Absolutely, cremation only takes the place of burying a casket.  Instead of proceeding to a cemetery for the comittal, the services are completed at the church or chapel and the cremation step will start when you give the orders.  You may ask one of directors about your options.
